Food Safety Whilst Hiking or Camping

 

Whether it be a short or long hike, food is essential. Most people want to carry as little weight as possible in their backpack, but transporting any food safely requires thought.

Main ways to take food

Dehydrating

Cooking your own food and sucking all the moister out. Later re adding water to eat.

Vacuum seal 

Cooking your own food and vacuuming sealing all the air out. 

Pre canned or packaged food

Pretty much what the heading says, you’ve bought the food pre-packaged. And abide by the use by date.

 

What bacteria can be harmful while hiking?

Campylobacter jejuni

Commonly found in untreated or contaminated water, this bacterium attacks the intestinal tract within 2 to 5 days after ingestion. It causes nausea, headache, fever and diarrhoea that can last up to 10 days.

Clostridium botulinum

Widely distributed in nature. Found in soil, untreated water, on plants and in the intestinal tracts of animals and fish, Clostridium botulinum causes paralysis over time. Initial symptoms include difficulty breathing and speaking and double vision. It can lead to death if left untreated for 3 to 10 days.

Escherichia coli O157:H7

One of the several strains of E.coli that can cause illness, it is found in raw or rare meat, contaminated water and uncooked fruits and vegetables. Nausea, diarrhoea, bodily aches and malaise can begin within 2 to 5 days after ingestion.
